Our Pili Nuts are from the BICOL Region at the foot of the majestic volcanos in the lush rain forests of the Philippines.
Pili trees have been growing for centuries. Working with a community of independent farmers who climb these ancient trees to pluck the ripe pili fruits. Skilled artisans then, with great precision, crack each hard shell by hand to extract the Pili Nut. The Bicolanos call this age-old process ‘pagtilad’ which uses a bolo to crack the shell. The pili nuts skin is painstakingly removed by hand after pre-sprouting. After dehydrating for days, the pili nuts are ready to eat.
